About the Truck
A Family affair is the cornerstone of the “sleek” silver food truck in downtown Kapaa known as Scorpacciata, specializing in Neapolitan style pizzas, with fresh, locally sourced ingredients. Chef Cory and Michelle Stokes pride themselves in delivering just what their food truck name describes – “an abundance of good food made with fresh local ingredients”.
Migrating his considerable culinary talents from the resort and local restaurant arena, Chef Cory has created one-of-a-kind pizzas like the Lawai Mushroom, with local oyster mushrooms – caramelized onions – Kauai Kunana Dairy goat cheese, farmer’s market kale, balsamic reduction and truffle oil. Or the Mediterranean, topped with pesto, mozzarella, artichokes, kalamata olives, sundried tomatoes, pepperoncini and feta cheese. Pizzas are available with a gluten free crust option and daily mouth-watering specials are made with what’s fresh and local.
